Cavacas de Margaride
In the past, these secular cakes, with a light, cloud-like appearance, were made by families to be offered in devotion to Our Lady. The cavacas that remained were kept and served when receiving guests.
Nowadays, although the secular tradition of being served at Easter has been maintained, the cakes are baked all year round and are great for a snack or with coffee.
The dough is also used to make the no less famous Cavacas de Margaride which, after leaving the oven, where they bake for about five minutes, are spread with a syrup (with egg whites, water and sugar) heated in a brass vat and covered with fondant that gives them their characteristic stripe.
Ingredients: eggs, flour and sugar.
